Delicious Gluten-Free Banana Bread

Ingredients
- 3 ripe bananas, mashed
- 75g melted butter
- 1 teaspoon bicarbonate of soda
- Pinch of salt
- 150g caster sugar (100g if you prefer less sweet)
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 225g gluten-free all-purpose flour
Instructions
- Preheat the oven to 180°C (160°C fan assisted). Grease and line a loaf tin.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
- Pour the batter into your prepared loaf tin. Bake for 50 minutes to 1 hour at 180°C (160°C fan assisted), or until a tester inserted into the centre comes out clean.
- Remove from oven and cool completely on a rack. Remove the banana bread from the tin and slice to serve.
